(More customer reviews)This mix saved my life. After being diagnosed with celiac disease, I tried all the "great" gluten-free bread machine recipes I could find (I am awful at baking bread by hand). They were all uniformly and unequivocally TERRIBLE. They were dense, didn't rise properly, caved in at the top or sides, etc etc etc. They also all tasted very gluten-free.
This mix, though is wonderful. It rises, sticks together very well for a fluffy gluten-free bread (it still has the tendancy to fall apart if not toasted), makes wonderful croutons and stuffing, browns properly and only occasionally caves in a little bit.
Things I have learned with this mix that help it a great deal:
1. Let the loaf sit in the bread machine for at least 20 minutes after it stops baking. (I have the standard Oster bread machine that was popular when the bread machine rose to popularity.)
2. Make it with rice milk. To me, cow's milk and almond milk taste funny with this recipe.
3. Let it cool for a good long while, it is very moist and will fall apart if you try to slice it immediately.

Plus the loafs come out perfect everytime (I've had issues in the past with getting whole wheat flours to rise as well as white flours). I've purchased this "collection" several times and will continue to do so.

(More customer reviews)I was diagnosed with Celiac Disease a year ago. The hardest part of going gluten free has been that the only gluten free breads that are readily available are white and doughy. I have made one myself using a variety of flours, but it still doesn't have that whole grain taste/mouth feel.
When I tried this bread after making it in my bread machine, I almost cried. It was delicious, texture was heavenly, and it was simple to make! Cheap too, especially if you sign up for the automatic reorder deal.
It doesn't seem gluten free and it actually has a decent amount of fiber in it.
I love Bob's Red Mill and Amazon too!

(More customer reviews)I have bought several kinds of gluten free bread mixes. I have made GF bread from scratch. Namaste is the bread my husband always tells me is the tastiest, although he has no idea which brand he is eating. I add ground nuts and some almond flour to all bread mixes because he preferred whole wheat bread before the GF diet. The nuts make the texture more like whole wheat. I have used walnuts, pecans and almonds chopped in a small processor.
